Stuffed Bell Peppers

I love stuffed peppers and I love trying something new each time I make them. Here is tonight’s recipe. 

In a crock pot mix together:

1 cup quinoa

2 cups water

1 lb. ground beef, uncooked. Some people prefer to brown it first. That’s up to you. 

2 diced Roma tomatoes

1 can black beans

1 tablespoon paprika

1 tablespoon garlic salt

2 teaspoons cumin

Salt and pepper to taste

Place crock pot on high and cook for at least 4 hours, or until meat is thoroughly cooked. Check often and stir, as needed. 

After the mixture is fully cooked place your meat/quinoa filling in 5 bell peppers that have been cut open from the top and cleaned inside. Make sure there’s no seeds in your peppers. 

Divide the filling evenly between peppers, top with shredded cheese and broil in oven for five minutes.
